Kale and Golden Beet Salad

This recipe was adapted from Peoples Grocery store. It was so good I had to make it myself.

Kale and Golden Beets Salad

flat leaf kale, chopped

carrots, julienne

golden beets, boiled for about 10 minutes, (I use the skin), sliced

lemon juice, about 2

soy sauce

tahini 

olive oil

salt pepper

hot sauce

ginger, ground


*add the kale, carrots and beets in a bowl. Squeeze the lemons in bowl, stir to coat everything.

*Make the dressing. Add about 1/2 cup tahini and 1/4 cup olive oil in a bowl, stir. 

*Add salt pepper, hot sauce, soy sauce and ginger to taste. The dressing will be thick, add water to thin it out. 

*Pour dressing into salad. Stir.

*Enjoy.
