I think this will be my go-to-pancake-recipe. It is light and fluffy with a melt in your mouth texture. Also good with mashed bananas mixed in.

Buttermilk Pancakes
   adapted from "Good to the Grain"

2 Cups                    Whole Wheat White Flour
2 Tablespoon          Sugar
2 teaspoon               Baking Powder
1 teaspoon               Baking Soda
3/4 teaspoon           Ginger Salt (#12)
1/2 teaspoon           Nutmeg, freshly grated
1 1/2 Cups             Buttermilk
1/2 Cup                 Kefir
2 Tablespoon        Molasses, Blackstrap 
2                           Eggs
1 Tablespoon       Vanilla
Zest of one           Lemon
2                          Bananas, mashed (optional)

  • Heat the griddle on medium low. 
  • In a medium bowl add the flour, sugar, baking powder, baking soda, salt and nutmeg together. Mix well.
  • In smaller bowl mix together the buttermilk, kefir, molasses, eggs, vanilla, and lemon zest, (bananas).
  • Pour the wet ingredients into the dry ingredients. Fold together until it is well incorporated. Do not over mix.
  • With large ice-cream scoop, scoop out pancake batter onto the well buttered griddle. Turn over after 3 minutes. Cook for another 2-3 minutes. 
  • Finish the rest of the batter the same way.
