Gourmet Mississippi Mud Pie

I’ve had this recipe since I was 16. My Nina (godmother) told me to make it for a party one day, have been making it since then. 
This version is a bit updated with creamy goats cheese and homemade chocolate pudding. 






Easy Addictive 








Crust:
1 Cup Butter
1/2 Cup Flour
2 T Powder Sugar
1 Cup Roasted pecans, chopped

Chocolate Pudding:
1 Pint Half and Half
4 eggs
4 T Cornstarch
12 oz Semisweet Chocolate Chips (1 bag)
1 T Vanilla
2 T Ground Instant Espresso

Topping:
1/2 package cream cheese, room temp., 4 oz
1 package creamy goats cheese, 4 oz 2 T. Powder Sugar
1 pint whip cream

Preheat oven to 350 degrees. Grease a deep tart pan. (I buy mine at Ikea, it's white and blue)
Crust: add everything in a bowl and mix with your hands. The consistence should be like a thick paste. If too dry (it will be crumbly) add more butter, little bit at a time. If too wet, add more flour. Pat in the greased pan. Bake for 15-20 minutes till golden brown. Let cool completely before adding filling.

Chocolate Pudding: In a small heavy pot add the half and half. Heat on medium. In a medium size bowl add the eggs, cornstarch, mix with whisk. When the milk is heated through, pour slowly into the eggs. Whisk fast, mix throughly. Add the milk and egg mixture back to the pot. Switch to a wooden spoon, stir constantly until thicken, about 10 minutes. Always adjust heat from medium to low when it starts to bubble or the pudding is thickening too fast with lumps.  It should look like pudding/custard when done. Add the chocolate, vanilla and espresso. Strain in a sieve into a bowl, cover with the plastic touching the pudding. This will prevent a skin on top of pudding. Refrigerate.

Topping: Whip half of the cream till stiff, take out and put in a bowl.  Cream the goat cheese and cream cheese in the mixing bowl, add powder sugar and vanilla. With the other half of the whip cream pour into the cream cheese. Whip till thick. 


Assemble: In the pie crust spread the cream cheese topping all over to make one layer. 
Next, add the chocolate pudding that you proudly made yourself:) 
Lastly, the whipped cream. 
Top with chocolate shavings and pecans, and berries.
