Squash Casserole

A good friend of mine gave me another great squash recipe, squash casserole.  I did have to modify it, our grocery store did not carry stuffing. I made a simple stuffing:


1/2 loaf of sliced bread, cubed
3 cloves garlic, minced
3 teas. crushed dried sage
1/4 cup butter, melted
1/2 cup chicken broth, or more if needed
salt and pepper to taste

  • Mix everything in a bowl. Let sit to absorb the liquid.
  • Follow the rest of the recipe.

Casserole Ingredients

2 lbs. yellow squash
1 cup chopped onion
1 Tbsp. butter
8 oz. sour cream
1 can cream of chicken
8 oz. can water chestnuts
Salt & freshly ground pepper to taste
6 oz. package chicken flavored stuffing mix
¼ cup plus 2 Tbsp. melted butter
Preheat oven 350 degrees F
Sauté 1 Tbsp. butter with squash and onions.  Once cooked, add sour cream, soup, salt, freshly ground pepper and water chestnuts.
In another bowl, combine remaining butter and stuffing mix. Add ¾ of stuffing mix to squash mixture.  Spoon onto lightly greased casserole dish.  Sprinkle remaining stuffing mix over casserole.
Bake 20 minutes.  Serve & enjoy.

Added this to the top, everything taste better with crispy onions!
