Homemade frozen Waffles (or Pancakes)

I am all about easy, but also about making things from scratch.......is that a oxymoron?
On Sunday I make waffles or pancakes. I double the recipe, enough for Sunday breakfast and freeze the leftovers.

Homemade frozen waffles. When ready to use, toast on low, and eat! 

For the waffles I use Orangette A Great Make-the-Morning-of Waffle or my friend, Denise's recipe Good Night Waffles. 


Whole Grain Buttermilk Pancakes


2/3 cup Whole Wheat Pastry Flour
1/3 cup Ground Cornmeal
1/2 t salt
1 T Brown Sugar
2 T Flaxseed Meal
2 Eggs
1 cup Buttermilk
1 T Oil
2 t Vanilla
1 t Almond Extract

• In a bowl whisk together the flour, cornmeal, salt, brown sugar and flaxseed. 
• In a smaller bowl mix the eggs, buttermilk, oil, vanilla and almond extract. 
• Add the wet ingredients to the dry. Fold just until combined.
• Add butter to a cast iron skillet, heat on medium. Enough butter to make a crispy edge. 
• Griddle the pancakes.
• Enjoy.
