Spelt Blueberry Biscuits

This site is going to take a different turn. I was told today my little monster is no longer allowed gluten/dairy/soy. I looked at her doctor with sad eyes, "But, I love to bake!" Yes, I am concern for my girl, but I feel she is not at high risk. She showed no major signs of allergies.
So......we are on a new adventure. Babycakes will be my new bible.







Spelt Blueberry Biscuits
Gluten Free
based on Babycakes
*I did not add sugar because I knew I wanted to have them with lavender lemon curd.

2 Cups Spelt Flour
1 T Baking Powder
1/2 teaspoon Salt
1 Cup Blueberries, frozen
6 T Butter, cold cut int chunks
1/2-3/4 Cup Water, cold


  • In a medium mixing bowl add flour, baking powder and salt. Mix well. Cut the butter into the flour mixture until it butter looks like pea size. 
  • Mix in all the blueberries. Next few steps work quickly.
  • Mix water with fork. First with 1/2 Cup, if not enough add 1 T of water at a time. 
  • Take the dough and place on a floured surface. Pat down until you have desired thickness of biscuits. Cut out, place on baking pan. 
  • Brush top of biscuits with melted butter. 
  • Bake for 20 minutes or until brown. 
  • Enjoy with a dollop of Lemon Curd.

  2. Thank you, Jora. She is fine, no major symptoms, thank goodness. Just to help with minor problems. Also, I think it's a good thing, our diet had too much carb in it.
