Papa Ben's Bean Salad
Missing Papa Ben at the moment.
2 Cans Chickpeas
1/2 Cup Chicken or Vegetable Stock
2 Bay Leaves
3/4 Cup Olive Oil, or more to taste
2 Lemons, zest and juiced
3 Green Onions, chopped
4 Sprigs Lemon Thyme, taken off the stems
Salt and Pepper to taste
- In a sauce pan add the chickpeas, stock, bay leaves, and a big pinch of salt. Add water just to cover. Simmer on low for 1 hour or until soft.
- Once done, drain the water. Add hot beans to serving bowl.
- Add the olive oil, lemon, green onions, thyme, pepper and salt. Mix well.
