Papa Ben's Bean Salad

Missing Papa Ben at the moment.

2 Cans           Chickpeas
1/2 Cup         Chicken or Vegetable Stock
2                    Bay Leaves
Pinch             Salt

3/4 Cup         Olive Oil, or more to taste
2                    Lemons, zest and juiced
3                    Green Onions, chopped
4 Sprigs         Lemon Thyme, taken off the stems
                      Salt and Pepper to taste

  • In a sauce pan add the chickpeas, stock, bay leaves, and a big pinch of salt. Add water just to cover. Simmer on low for 1 hour or until soft. 
  • Once done, drain the water. Add hot beans to serving bowl. 
  • Add the olive oil, lemon, green onions, thyme, pepper and salt. Mix well. 
The best way to eat it is the next day. Cove and put in the frig over night. The next day all the flavors come together. That's what Papa Ben says.
