Camping: El Capitan

.....Really this post is about what I cooked! I was in heaven. It was the perfect vacation-all day I did my domestic duties while my husband caught up on his magazines. And the kids got a lot of fresh air.
We rented a airstream from Santa Barbara Silver Safari. Great company, lovely family. And we stayed at Ocean Mesa in El Capitan, amazing RV park! They have everything. A beach, a pool, nice public bathrooms, a market/Deli, playground, trails and plenty of activities. 

Here is the list of what I cooked:
Day One
Foil Wrapped Dinner
    Peppers, Zucchine, Onions with Butter, Salt and Pepper
    Chicken with Rosemary, Garlic, Lemon, Olive Oil, Salt and Pepper
    Basmati/Wild Rice

*AT HOME: I marinated the chicken in zip lock baggies and stuck them in the freezer. The day we left I put the chicken in cooler bag.


Day Two
   Gluten/Dairy Free Blueberry Pancakes: Blackbird Bakery 

Breakfast made at the table?! I love it! 
*AT HOME: I made ziplock bags of all the baking dry ingredients, then I insert a sheet of paper of all the wet ingredients and instructions. Instant baking mixes!

   BBQ Ribs
   Corn, Tomato, Basil, Arugula Salad
   Potato Salad
   Smores: I used our local chocolatier's hot cocoa mix. It came with chocolate pieces and marshmallows, perfectly packaged for the trip.

Day Three
   French Toast: I bought the bread in Santa Barbara, Adama
   Bacon and Sausages

   Chili: This recipe was excellent! 
   Basmati/Wild Rice
   The famous Campfire Orange Cake: I used the Ginger Spice Cake Recipe from Blackbird Bakery.

It was a great weekend. Where do you go camping? Would love to know some areas. 


  1. There's a great campsite close to my house!!! it's right next to the RV Megastore. You know you want to come to Alabama! ;)

    1. I'm thinking about going to Atlanta for spring break.....
