Onion Flaxseed Crackers ~Gluten Free~



Really good crackers to have on hand-crispy, light, crunchy. I made these for our camping trip, something to snack on while on the road. I put the crackers in a mason jar so it wouldn't turn into crumbs. 


Onion Flaxseed Crackers ~Gluten Free~

1/4 Cup       Flaxseed, grounded
1/4 Cup       Flaxseed, whole
1 1/2 Cups   Gluten Free Flour (i used Bob Mill's AP flour, the bean flour is great for these crackers)
1/2 t             Baking Powder
1/2 t             Salt, plus more for sprinkling
2T               Butter, softened
2 T              Onion, finely chopped (i used shallots)
2 T              Parsley, finely chopped
1/2 Cup       Coconut Milk, from can
1                  Egg
1t                 Ground Pepper
  • Preheat oven to 350. 
  • In a bowl add both flaxseeds, flour, baking powder, salt, onion and parsley and pepper. Mix well.
  • With your fingers cut the butter and flour together until crumbly. 
  • In another bowl whisk the milk and egg together. 
  • Mix the milk and egg mixture into the flour. Combine till it makes a dough.
  • Roll and cut into crackers.
  • Bake crackers on a lined cookie sheet. 
  • Bake til crackers are crispy. It takes about 20 minutes or until crackers are golden brown. 
  • Cool on cookie rack and store in a jar.
  • Enjoy with butter or salami.
