{Gluten Free} Chocolate Chip Cookies

I know there are a million recipes for chocolate chip cookies. I will add another one!

{Gluten Free} Chocolate Chip Cookies

2 Cups            Oat Flour (add 2 cups of rolled oats in high power blender, blend till almost powdery)
1/2 Cup          Bob's Red Mill AP Gluten-Free Flour
1 Cup             Coconut/Palm Sugar (great article about alternative sugars)
1/4 Cup          Ground Flax Seed
1/4 Cup          Arrowroot
1/2 t                Chia Seeds
1/4 t                Psyllium Husk
1 t                   Baking Soda
1 t                   Sea Salt
1 Cup +3T      Butter, melted
6 T                 Applesauce
2 T                 Vanilla
1 Cup             Chocolate Chips
1 Cup             Macadamia Nuts, chopped
  • Preheat oven to 325 degrees. Line baking pan with reusable parchment paper.
  • In a large bowl add all dry ingredients: oat flour, AP flour, sugar, flax seed, arrowroot, baking powder, salt. Stir until well blended.
  • Add butter, applesauce, vanilla, chocolate chips and nuts. Blend with a spatula till everything comes together. 
  • Drop a tablespoon of cookie dough on pan. 
  • IMPORTANT STEP: spread dough with fingers. Try and make the cookies flat. Do the same the rest of the dough, 1 1/2 inch apart.
  • Bake for 10-12 minutes, rotating 6 minutes into baking. Or until golden brown. (I like my cookies on the darker side-who's with me?)
  • Cool on baking rack.
