Grilled Steak with Carrots and Avocado

I will begin to post easy recipes, per my brothers request. Here you go, bro!

Grilled Steak with Carrots
feeds 4                                     gluten/soy free

2 large            steaks, bone in, plenty of marbling-th more fat, the better*

3T                   ghee
2 heads          garlic, chopped
small              ginger, fresh, sliced
1 bushel        carrots, shredded
6T                  parsley, chopped
2                     avocado
                       black and white sesame seeds
                       salt and pepper

  • Take out steak 30 minutes before cooking. Set it in the sink, let the steak come to room temperature.
  • Turn grill on high, cover and let heat to 350 degrees
  •  Put your cast iron pan on grill add the ghee, turn down the gas grill to medium. 
  • Once the ghee has melted add the garlic and ginger. Make sure not to burn the garlic, (brother).
  • Throw the carrots in, cook until tender. 
  • Salt and pepper to taste. 
  • Set the cast iron to the coldest side of the grill. I turn one of the gas burns off, and set the pan on that side. 
  • Place steak on grill, cover and do not touch for 10 minutes. 
  • With thongs pick up the steak and turn slightly (same side, cooked side). This gives the steak  lattice marks. Cook for another 8-10 minutes.
  • Turn steak over, cook for 8 minutes. Turn steak slightly again. Cook for 5 minutes. 
  • At my house we like our steak medium rare. Press the steaks in the middle, it should feel like the skin between your thumb and pointer finger. A bit soft.
  • Take off the steak off the grill and let rest on a plate for 10 minutes. Slice, short ways or against the grain. 
  • Add slice avocados, parsley and sprinkle sesame seeds on top of the carrots. 
  • Plate the steak and carrots. NOTE: Salt and pepper the steak after it is cooked, salt pulls out moisture when the steak cooks. 
  • Enjoy. 


*Once done, save your bones in the freezer for broth or give to your doggie
