Asian Chicken Soup

Made this recipe for my "sick" husband.

Asian Chicken Soup

4              Italian Chicken Sausages, 3 spicy and 1 mild
2 T           Avocado Oil
1              Onion, large and chopped
4              Carrots, chopped
3              Celery, chopped
5              Garlic (again sick husband), whole
3 T           Curry Powder
2               Bay leaves
4-6 Cups  Chicken Stock, homemade
assortment of veggies. I had on hand: zucchini and squash. Spinach, chard, cauliflower, potatoes, leeks would be good as well.
1/2 Cup         Coconut Milk
salt pepper to taste

  • Take the sausages out of their casings. I run my knife long ways to cut the casing open. 
  • In a dutch oven add the avocado oil, on medium high heat.
  • Add the sausages and onions. Sauté till golden.
  • Add the garlic, carrots, celery and bay leaves. Add salt and pepper. Sweat vegetables. Mix in the curry powder, brown for about a minute.
  • Pour the chicken stock and your assortment of veggies. 
  • Bring to boil then turn down heat to simmer until veggies are cooked. Test the salt level.
  • When ready to serve add the coconut milk. 
  • Enjoy!
