Gluten Free Cheese Sauce

Ingredients

1/4 Cup        Butter
4 T               Garlic, minced
1/2 Cup       Arrowroot
1 Cup          Half & Half Milk
2 Cups         Irish Cheddar Cheese, grated (i like organic valley raw sharp cheddar or kerry gold                 
                                                                     cheddar)
1/2 t             Nutmeg
1 to 2 T       Turmeric, fresh or ground
Salt & Pepper to taste
                    Parsley

Direction
In a medium heavy bottom pot melt butter on medium low heat.

Add garlic, sautéed for about 2 minutes till fragrant.

Stir in arrowroot with a whisk. Cook out the "flour taste" for about a minute.

Sprinkle in 1/2 teaspoon of each salt and pepper.

Slowly add the milk, quickly stir the milk and paste. 

Let the mixture thicken for about 3 minutes. 

Stir in the nutmeg and turmeric.

Stir in the cheese with a spoon.

Have a taste, see if it needs more salt and pepper. Add a sprinkling of parsley.

Enjoy on top of nachos, great sauce for mac and cheese, dipping sauce for almost anything!
