Gluten Free Drop Scones

GF Drop Scones

240g            gf flour (i used Pamela’s) 
1 T baking powder
30g cane sugar
Pinch of             salt
80g butter
1 egg
150g                  buttermilk 

Preheat oven to 425 degrees.

In a bowl mix flour, baking powder, sugar and salt.

With your fingers rub together the flour mixture and butter until the size of peas and sand.

Fold in the egg and buttermilk with a spatula. (if dough is still dry add a T at a time  of buttermilk till it comes together)

In a cast iron skillet melt 2 T butter. make sure butter covers the sides and the bottom of pan. 

Drop biscuits by 3 Tablespoons big onto cast iron. Make sure there is space in-between biscuits, this helps it grow. 

Bake for 25 minutes. Biscuits are done when top and bottom are brown. 

we like to eat them hot with tons of butter and V Smiley jam (introduced by vermont crafted good co.)
